Discover mouthwatering Stuffed Portobello Mushrooms – a culinary journey to transform ordinary ingredients into a symphony of Flavors! Let’s begin by taking four Portobello mushrooms, cleaned, trimmed, and ready to be transformed. Keep some mushrooms in reserve to enhance the dish’s depth.

Ingredients

  • 4 Portobello mushrooms, cleaned and trimmed. Remove the gills and stems, but reserve them for the filing.
  • 1 roasted red pepper, chopped
  • ¼ cup boiled bamboo shoots, chopped cubes
  • ½ cup red onion, diced
  • ½ cup shredded sweet potato
  • 2 garlic cloves, minced
  • ½ cup spinach
  • ¼ cup dried breadcrumbs
  • ¼ cup grated Parmesan, (you might require more to sprinkle on the dish once it is ready)
  • ¼ teaspoon fresh basil, chopped
  • Olive oil, for frying
  • Salt and pepper

Before starting the preparation, preheat the oven at 190 degrees C (375 degrees F)

Meanwhile, heat the olive oil in a pan at medium heat. Saute onions, garlic and diced stems of the mushrooms until they turn light brown.

While you get an aromatic smell of onions and garlic, take a mixing bowl and mix red pepper, boiled cubes of bamboo shoots and shredded sweet potato.

Once onions, garlic and stems are sautéd, add spinach and cook for 1-2 min to get the flavour and then add all to the mixing bowl you have prepared with the other ingredients. 

Sprinkle salt and pepper into this mixture. Add grated parmesan to enhance the texture a little bit, and add dried breadcrumbs. Just before the mixture is ready to be put into the stuffing of Portobello mushrooms, add some freshly chopped basil. In case you don’t have basil, you can use oregano or thyme.

The stuffing is now ready for the grand finale – the filling is lovingly spooned into the awaiting Portobello caps, creating a masterpiece in each. And just before you slide them in the preheated oven, graciously dust some more grated parmesan on them for a yummy cheesy flavour.

Cook them in the oven for 40 minutes. Once they are cooked, remove them from the oven and before you serve, garnish them with some more freshly grated parmesan and fresh chopped basil.

This is a very easy recipe, as it is fuss free, made with easily available and home pantry ingredients and with fresh whole food ingredients.

Ingredients

  • Portobello Mushrooms- 4 Pieces, cleaned and trimmed. Remove the gills and the stems but reserve them for the filing. Marinate with 1 tbsp apple juice and keep it aside.
  • ½ cup roasted walnuts,
  • ½ cup roasted pistachios (or any other nuts of your choice)
  • ½ cup onion, chopped
  • ½ cup celery, chopped
  • 2 garlic cloves, minced
  • 1 tsp rosemary
  • 1 tsp thyme or basil
  • 1 tbsp nutritional yeast
  • ½ tsp of spices of your choice (preferably black pepper powder, smoked paprika, golden sage)
  • Salt as per taste
  • 1tbsp coconut aminos
  • ¼ cup apple juice
  • 1 tbsp vegan butter

Take nuts, garlic, rosemary, basil, spices and salt as per taste and grind them together. Grind them till they look coarse. Also grind chopped onion and celery into a chunky texture but not a paste.

Next, heat vegan butter in a pan. Add grinded onion and celery and cook for 4-5 min until you get the aroma. Once the moisture has dried and it looks light brown, add a tbsp of coconut aminos (substitute for soy sauce) and cook for a minute.

Now add the coarse nut mixer and cook for 2-3 minutes until all are mixed well and are aromatic.

Add apple juice to this mix and cook for the next 5-6 minutes until all are mixed well, the juice is completely soaked and mixture starts turning brown. The filing is now ready.

It’s time to prep this in the oven. Preheat the oven at 204 degrees C (400 degrees F).

Take a baking tray and place your mushrooms. Now take the stuffing and fill the mushrooms. Sprinkle the leftover nut mixture on them and bake for 25 min. Garnish them with basil and freshly grated parmesan to a little cheesy flavour too.
